Weeknight Meal Planning with Emeals

I sometimes ask people this question, “If you could choose between a chef and a maid, which would you choose?”  And while most people answer ‘maid’, I think that ultimately I would choose a chef.  It’s not that I hate cooking, but I hate cooking at the time of day that dinner is at.  I’m always so exhausted by that time and standing in a kitchen while my kids whine about how hungry they are is really the last thing I want to do.  So I tend to block out that task and when forced to actually plan what to make for dinner, I keep coming up blank.  I really hate thinking of ideas.

So I tried a meal planning site called Emeals.  It’s pretty awesome.  It was actually created by two moms who were sick of not having enough ideas for dinnertimes.  I wish I’d thought of it!

So for a low monthly fee, emeals sends you a meal plan, complete with shopping list and recipes for seven dinners in a week.  And every week you get new meal plans.  The best part is that they have a bunch of different eating style meal plans to choose from such as Palea, clean eating, vegetarian, low-fat, low-carb, and on and on.  So if and when you decide to try a new way of eating, you still get meal plans!  I love this feature because one of my biggest diet hurdles was finding healthy recipes.

You can print out the meal plans and shopping list, but my favorite part of emeals is the mobile app.  It’s super easy and convenient to use.  You can ‘skip meals’ if you don’t like one of them and it will only show the meals you are planning on making.  Then you can check stuff off the shopping list that you already have so your list only includes the things you need to buy.

This week I tried one of their recipes and it was awesome!  Doesn’t it just look good?  These are Oatmeal Banana Pancakes and I actually already had all the ingredients for it.  Another reason I like emeals–they use normal ingredients.  No offense, but sometimes on certain websites, they have amazing recipes but all the ingredients are so random and weird.  Ain’t nobody got time for that.

They really were good, and easy to make. They were filling too, so I didn’t even need to eat the full portion before I felt full. And I chose the portion control plan.  I think once the new year starts and I want to amp up the weight loss (dieting at Christmas time is seriously…yeah.)  So maybe I’ll choose the Paleo plan or the Clean Eating plan.  They’re all good!  (Although you can only switch a certain number of times before they give you a waiting period so don’t go crazy with it.)

Oatmeal Banana pancakes

So here’s a free recipe for you, courtesy of Emeals.

Oatmeal Banana Pancakes

Ingredients
  • 2 cups Aunt Jemima® whole wheat pancake
  • mix
  • ½ cup old fashion oats
  • 2 tablespoons packed brown sugar
  • 1½ cups fat-free milk
  • 2 eggs
  • 3 ripe medium bananas, sliced
  • 1½ cups sugar-free syrup
Instructions
  1. Combine all ingredients except bananas and syrup in a large bowl. If batter is too thick, add tablespoons of milk until desired consistency. Heat a large sprayed skillet or griddle on medium heat. For each pancake, pour slightly less than ¼ cup batter onto medium hot griddle. Cook until browned. Serving: 3 pancakes, ½ banana and ¼ cup sugar-free syrup.
