Shamrock Cracker Toffee
 
Preheat the oven to 400 degrees and start melting 1½ cubes butter in a saucepan.  Then stir in 1½ cups brown sugar.  Meanwhile, line a jelly roll sheet with parchment paper and then saltines.  Let your butter/sugar suace boil for 2 minutes and then pour it over the crackers.  Put it in the oven for 6 minutes.  While it's baking, melt a bag of chocolate chips in the microwaves in increments, stirring until you have a liquid chocolate.  Let the pan cool for a couple minutes before pouring the chocolate over the top.  Spread it evenly and then sprinkle the topping of choice over the top (in this case we did mint M&Ms and rainbow mini M&Ms.)  Chill in the fridge for a couple hours and then take it out and break it apart to serve.
