Mushroom and Onion Pizza

In my near-seven years of marriage and cooking meals for my family, I am now what I consider an intermediate level cook.  But there are certain things I stick to in the kitchen that ensure a no-fail dinner.

Number one:  Keep it simple.  It seems like every single time I try to make some fancy meal, it ends in yucky disaster.  But most of the meals I’ve made that are very simple end up being my family’s favorites.

Number two:  Think of meals that use similar ingredients so I can use up leftovers.  I make a whole bunch of chicken on Monday, then I can use it several times throughout the week and I don’t have to grill chicken every night.  Saves time and mess.

Number three:  I also like meals that use very few dishes because with my husband’s crazy work schedule, it’s usually me doing the cooking as well as the cleanup.

So this is what I want to share with you now, to help you find meal ideas that are fast, simple, and delicious–with less mess too!  It’s called my Recipe of the Day…and basically I’m going to be posting what I make for dinner (or occasionally another meal.)  You can find all these recipes by clicking on the Recipes link on the navigation bar!

Mushroom Onion Pizza

Today’s Recipe of the Day is Mushroom and Onion Pizza.  So yes, this IS what I ate for dinner tonight.  It turned out great!  I took the base of the Santa Fe Chicken Pizza and replaced the southwest toppings with sauteed mushrooms.  It’s kind of a heavy meal so it doesn’t take a lot to fill you up!  The onions are sweet and tangy and the mushrooms are savory, a great blend of flavors.  If you like mushrooms, this is a great meal for you.

Mushroom Onion Pizza
Recipe type: Entree
Serves: 8
 
Ingredients
  • 3 onions, red or yellow
  • ¼ cup butter
  • ¼ cup olive oil (half for onions, half for mushrooms)
  • 1 cup red wine vinegar
  • 1 box sliced white mushrooms
  • 1 premade pizza crust (I used Freschetta brand)
  • 2 cups shredded mozzarella cheese
  • 2 cooked chicken tenders
Instructions
  1. To make pickled onions:
  2. Sautee sliced onions in olive oil until they are cooked through. Then add in the red wine vinegar and let it simmer for about 20 minutes, till the onions are colored a red brown and very limp. Then add in the butter and let it melt and simmer for another 10 minutes. It takes a while but it is worth it!
  3. To assemble the pizza:
  4. Put pickled onions liberally on top of the pizza crust. Then layer on mozzarella cheese, diced chicken pieces, and mushrooms which you have sauteed in olive oil. Then bake the pizza in a 415 degree oven for 8-10 minutes.
