Island Spice Chicken and Coconut Rice
 
Ingredients
  • Island Spice Rub
  • 4 tsp salt
  • 2 tsp pepper
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tsp cinnamon
  • Coconut Rice
  • 1½ cups jasmine rice
  • 2 cups coconut milk (or 1 can)
  • 1 cup sugar
  • 1½ cups milk
  • 1 cup water
Instructions
  1. Put it in a ZipLock bag with the chicken and cover the chicken evenly. Meanwhile, preheat the oven to 350 degrees. Heat a little olive oil in a frying pan and brown the chicken on both sides. Place all the chicken in a 9x13 baking dish and sprinkle garlic powder and brown sugar over the top. Bake for 20 minutes.
  2. Coconut Rice: Put all the ingredients into a saucepan and bring it to a boil, stirring frequently. Cook on low for about 30 minutes, when all the moisture is absorbed, stirring every 5 minutes.
