Summer is salad time. I love to throw together random stuff to make delicious and different salads. Here is a very simple idea for a salad which works very well for a main course.
Strawberry Chicken Salad
- 3-4 chicken tenderloins, marinated in Italien dressing
- Field greens or chopped Romaine lettuce
- Feta cheese crumbles
- 6-8 fresh strawberries
- Candied almonds
- Poppy Seed dressing
Cook the chicken in a frying pan, using the excess marinade to keep it moist. After it’s cooked (about 5 minutes or so), remove to cutting board and let it rest for a couple minutes before slicing it up against the grain.
While the chicken is cooking, cut up strawberries and lettuce and throw in a bowl with the Feta and almonds. Then add the chicken.
This is the poppy seed dressing I use (or you can obviously make your own but I am all about quick!) It’s Brianna’s Home Style. I use it on lots of salads and I love it.
Toss and serve! This salad is amazing fast to put together for those summer nights when you don’t want to be slaving away in a hot kitchen.
