This is a fun dessert that is very quick and easy and delicious. You can make a whole bunch in a cake dish or individual ones like this! But the best part is that it’s almost completely non-fat. Love it!
Blueberry No-Bake Cheesecake
1 package of low-fat graham crackers
1 8 oz. package non-fat cream cheese at room temp.
1 C. powdered sugar
1-2 C. non-fat Cool Whip
1 tsp. Vanilla
2 packages of blueberries
Pound, blend, or process the graham crackers into fine crumbs. Line the bottom of your pan (or ramekins) with the graham crackers, distributing evenly. Then whip the cream cheese, sugar, vanilla, and Cool Whip with an electric mixer. Pour the filling over the graham cracker crumbs. Let it set in the fridge for a couple of hours. When you’re ready to serve, throw the blueberries over the top. Serve!
Makes 6 ramekins. You should probably double this recipe for a cake pan.
