Shamrock Cracker Toffee

Want to try a glorious and easy treat?  Time for some Shamrock cracker toffee!  I usually call this stuff ‘crack’ but it’s starting to get a bad rap.  So now it’s ‘Cracker Toffee’ to all y’all.  (It’ll still remain Crack to my family.)

This is my regular go-to for holiday related treats.  It’s delicious and chocolatey and you can add any kind of festive topping to make it perfect for any holiday.  This month’s edition is mint M&Ms and rainbow mini M&Ms.  Because you know, St. Patrick’s day is all about green and rainbow.  Duh!

This is easy and pretty fast.  Preheat the oven to 400 degrees and start melting 1 1/2 cubes butter in a saucepan.  Then stir in 1 1/2 cups brown sugar.  Meanwhile, line a jelly roll sheet with parchment paper and then saltines.  Let your butter/sugar suace boil for 2 minutes and then pour it over the crackers.  Put it in the oven for 6 minutes.  While it’s baking, melt a bag of chocolate chips in the microwaves in increments, stirring until you have a liquid chocolate.  Let the pan cool for a couple minutes before pouring the chocolate over the top.  Spread it evenly and then sprinkle the topping of choice over the top (in this case we did mint M&Ms and rainbow mini M&Ms.)  Chill in the fridge for a couple hours and then take it out and break it apart to serve.
